Tell us a little bit about your company and how you got started.
It’s been a life long dream of mine to own a pastry shop, and my husband also wanted to own a business as well. My husband and I had been working in professional kitchens for over 12 years now, mostly out West and always wanted to move back home to New Brunswick. We realized that there was nothing like what we wanted to have currently in Fredericton, so we got started on writing our business plan and turning our dream into a reality…Chess Piece Patisserie & Café opened its doors July 11th, 2014.
What makes your work unique? Why should couples hire you?
We have an attention to detail, because we’re trained chefs. We have a high standard for the quality of work that we do. There is a lot of love that goes into making sure that the couples get cakes that they are happy with visually, but more importantly, that taste delicious!!! It’s been mentioned to me a few times from different venues that our cakes are the most eaten cakes at weddings, so that makes me happy! I hate to see that product go to waste.
What is your ideal client like?
I don’t think that I have an ideal client per sey, as we love all our clients, and we get some pretty cool ones. But I guess when we have couple that come to us with a different idea for a cake, it lets us add to our repertoire. We’ve done a few dessert buffets before as well!
Do you do custom flavors? How about gluten-free, lactose-free, vegan, or other specialty options?
We sure do! We can accommodate all those! We’ve handled egg allergies before as well. As long as there is a little wiggle room to move within those perimeters we can make it happen!
Do you offer anything other than cakes?
Absolutely! We’re a dessert shop, we’ve done a few dessert tables for weddings. We can also do appetizers, but we don’t have the capacity to hold them warm.
What is the most unique cake/dessert you have created?
Hhhmmm, that’s a tough one…years before the shop existed, I made a wedding cake themed to the tv show “Friends” it was a 5 tiered cake that was sculpted to look like stacked coffee mugs.
What trends when it comes to wedding desserts are you seeing among Maritime couples lately?
A lot of the cakes that we’ve booked for this summer are all mostly textured buttercreams, rustic looks or smooth white fondants with lacing or with minimal piping, metallic are on a couple cakes which I think is pretty cool!
I’m seeing a lot of people getting away from dark fondants, quilted looks, most people don’t really like the taste of fondant and it really can drive up the price on a cake as well because fondant isn’t cheap
What tips or advice can you give to couples who are ordering their cake and desserts?
I tell all my brides to have an idea of what cakes you like. Pinterest is an amazing tool! Know your budget and what is realistic, don’t get your heart set on something that maybe is out of your budget, but there’s so many options, in the end, our goal is just to make you happy!
